The Countryside Lefse Company was founded in 1965 in Blair, Wisconsin. The company still resides in this town of 1,200 in West-Central Wisconsin. Many of our customers talk with Marshall or Amy Olson, the owners.  In the lefse shop we have 10-12 lefse makers mixing, rolling, baking, and packaging the lefse.  When we are baking, the whole town smells of lefse.  Many people stop in for a few packages after being lured in by the aroma.  Due to the fact that we bake all year round sometimes it is tremendously the shop is hot and sometimes it is down right cold.  Either way,  we enjoy the challenge of making the best lefse available.  Don't tell anybody but 3/4 of our customers admit it is better than Grandmas or Aunt ______ .     

     Commercially made lefse has taken many different directions.  Many lefse companies have gone to instant potatoes because it is easier to mix, especially when machines roll out the dough.  When you use real potatoes, many variables come into play, which include the type of potato, how to cook it, how long and fast to cook it, how to store it, and the list goes on.  We still use this method as we have since 1965.  Every year we adjust the mix, every day we adjust the mix, every mix we find the need to adjust.  Real potatoes make it tricky.  So why do it ?  Real potatoes have better taste, better texture, hold more moisture, and can withstand freezing and refrigerating much better.
